Tortilla Egg Bites and Hashbrown Casserole!

Breakfast, brunch or breakfast for dinner! This was so easy, so good, and all Aldi!

Tortilla loaded egg bites

Loaded has brown casserole


Ingredients

Egg bites:

•eggs

•tortilla of choice- can also use the low carb tortilla option for anyone on low carb.

•garlic salt

•pepper

•I also used the herb seasoning from Aldi but it’s not needed!

•bacon bits

•green onion


Hash brown casserole

•frozen hash browns

•diced ham

•bacon bits

•cream of chicken (can also use cream of mushroom or can simply use chicken stock and cream of cheese if you have it)

•green onion

•Cream cheese

• shredded cheese of choice


Instructions:

Egg bites

•spray muffin pan with non stick spray of choice.

•roll tortillas.up and cut into pieces. Place in muffin baking pan

•whip eggs in a bowl-add salt and pepper and pour inside and in the crevasse of the tortilla rolls.

•place toppings of choice on top, I layered bacon bits, green onion then shredded cheese

•place in oven on 350 and cook about 10-15 minutes. Until eggs are plump and not runny.

•plate and serve!

* I added some sour cream and tobacco on top just for a kick! But hubby and kiddos ate plain!


Hash brown casserole

•in a cooking dish combine all ingredients, stir together thoroughly.

(Save some of the bacon bits, green onion slices and ham to top also)

•once all ingredients are added, sprinkle some shredded cheese, green onion, bacon bits and ham if used on top.

•place in oven on 350 about 30 minutes

•playe and serve!
