Blackened Fish tacos with mango slaw salad; budget friendly!

Blackened fish and shrimp tacos with a mango cabbage salad! SO GOOD! And super easy!

INGREDIENTS:

1lb Cod (or fish of choice) fresh or frozen

2tsp avocado or olive oil

1/2 cup sour cream

1 cup mayo

Blackened seasoning (I got the seasoning blackened rub from Aldi)

1 1/2 cup of purple cabbage chopped or shredded

2tbsp lime or Lemon juice whichever you have will do

Tomato’s

Butter

Tortillas of choice

Guacomole- store made or homemade.

Shrimp-fresh or frozen

I got a instant Mexican rice pack form also also, and added half n half and Mexican blend cheese to a skillet to cook

(Now you don’t have to make the mango salad, if you would rather keep the sauce and ingredients separate to layer that is okay, but I chose to combine mine for a salad mixture to top with)

Mango salad:

First make your sauce;

Add the mayo, blackened seasoning:sour cream and lemon or lime juice to a bowl and mix

Pour in purple cabbage, tomato’s, mangos (I cut two mangos up and used in this)

Combine all. Set aside.

Fish:

Combine blackened seasoning over fish and shrimp, toss and make sure all parts or layered well with seasoning:

Add your oil/butter to a stainless steal pot, heat pan over medium heat and cook your fish and shrimp about 3-5 minutes on each side or until cooked through.

I also chose to warn my tortillas on the skillet with butter until golden brown on both sides

Assemble tacos and serve.

I layered guac, Mexican rice, fish/shrimp, mango cabbage salad and serve.

You can also add queso or cilantro to top and a squeeze of lime! So many options!

Can serve with salsa, guac and or queso! ❤️
