
“Caprese” toast with pesto: budget friendly; Aldi style

Hey mambo! Mambo Italiano!
This is so good and ALL ALDI!
Ingredients:
Baby tomato’s on the vine
Pesto
Sliced Italian loaf
Olive oil
Minced garlic
Salt and pepper
Red pepper flakes
prosciutto
Fresh Mozerella 
Balsamic glaze
Mixed greens blend - or can just use spinach or arugula or both or none at all.
Instructions
Preheat oven to 350
Place tomato’s in a baking dish; add in garlic, salt and pepper, olive oil and red pepper
Flakes, roast in the oven for 50-60 minutes or until the tomatoes are wrinkly and soft but still glossy and hold in shape.
Toast bread on stove top with drizzled olive oil.
On top of bread place;
Pesto,  prosciutto, greens, Mozerella, then tomato roast. Add balsamic glaze on top and serve!
Perfect for a light lunch or snack with a glass of your favorite Aldi wine! Or for an appetizer for Italian night or date night! Also a great food to have out for company over or brunch with the girls!
Can do this on flatbread, naan Aldi bread, or a smaller finger sized French bread sliced as a finger type food dish!
So many options, affordable and delicious!
