
Roasted Salmon with sweet potato/cheesy rice: budget friendly!

Ingredients
Salmon-with or without skin
Dill-fresh or spiced
Old bay/seafood seasoning of choice
Garlic salt
Pepper
Lemon
Brown sugar
Instant rice
Diced Sweet potato
Shredded Gruyère/Swiss or cheeses of choice for rice
To start I Seasoned the salmon with dill, tad of old bay, and citrus seafood blend, garlic salt, pepper, cooked on 350 about 30 minutes, just until center was done and still fall apart tender. If using a thermometer internal temp about 145^f per USDA recommendation.
The rice, I used the cheap chicken flavored packs from Walmart or Aldi (it doesn’t clash and you don’t taste that!) I added milk with butter and water to cook rice in so it blends together to make a sauce as it cooks. Then I added shredded Gruyère and Swiss to the rice blend and mixed in well.
In a separate pan I diced up sweet potatoes (can use already frozen diced ones or can dice fresh ones yourself) sautéed them in a pan with butter, garlic salt, pepper, touch of brown sugar, then added into rice mixture ones all was done, and plate! :)
