Creamy Tuscan Chicken Pasta: Aldi style!

Now before we get into this don’t expect me to be the girly saying 1tsp of this 2tsp of that because she ain’t me! I just throw stuff in the pot and pray it tastes alright, alright, alright! Sometimes it does, sometimes it doesn’t, but hey! That’s just part of it!


Ingredients:

Chicken (thigh/tenderloin/breast/cutlet) whichever you prefer!

Kicked up chicken seasoning

1 Lemon or lemon juice

Olive oil

Garlic salt

Minded garlic

Parmesan

Salt

Pepper

Heavy whipping cream-milk- or half n half (whichever you prefer)

Chicken stock/broth

Baby Tomato’s

Tomatoes sauce

Spinach

Mushrooms

Shredded Gouda cheese

Bread

Butter

Noodles of choice- I did rigatoni!


1. I’m a large cooking pan add olive oil on medium heat: Pat chicken dry( you can really use any part of the chicken you prefer, I just went with the tenderloins as that’s what I had!)

Pat dry and season well on both sides.

Once chicken is seasoned and pan is hot enough, place chicken on the pan and get a good seer on both sides cooking through the center. I think I did about 5-7 minutes on each side for reference and checked the center as I went.

Once chicken is finished cooking place on a deep rate plate to rest.

2. Add garlic butter and more olive oil to the same pan you cooked the chicken in. Add in chicken broth, lemon juice, mushrooms, tomatoes (some tomato sauce or juice if you have it- about 2-4 good sized spoonfuls), salt, pepper to taste, garlic powder - (here you can get creative with your veggies- this is what I used but you can add what you want), I continuously season to taste as the sauce cooks, If it’s not basking in seasoning I don’t want it! That southern mamma in me I suppose! Season as you like! I also added the kicked up chicken sensing I used on the chicken in the sauce also.

Once veggies are cooked here, add heavy whipping cream or half and half, more chicken stock, butter and spinach and Parmesan, stir til Parmesan is cooked in and let simmer.

3. Once sauce is to taste how you like, add back in chicken and juices from chicken on the plate- you can cut chicken up or add in whole.

4. At any time in the cooking process cook pasta on stove top in separate dish.

Can add psta into sauce once cooked or keep separate and plate.


For bread:

Preheat oven to 350

You can use the premade garlic butter or can make your own with your own preferred spices to make- add slices and butter in a mixing bowl then place in the fridge to rest or immediately spread on bread, can eat on bread straight away or can cook bread with spread on there.

Mix butter if choice, garlic, parsley, Parmesan cheese, Italian seasons, black pepper and the slightest touch of paprika.


Spread on bread, then add shredded Gouda cheese on top, add olive oil lightly over the top of all of this, pop in the oven, cook and enjoy!

I just watched the bread closely and took our once cheese was melted and getting slightly golden on top!
